chicken & spinach pasta bake


This pasta dish was SO easy, and another hit with Kent, {cut into bite size pieces, of course!} I just have to share it:

INGREDIENTS
8 oz rigatoni pasta, cooked & drained
8 oz chive & onion cream cheese
10 oz frozen spinach, thawed and squeezed dry
1 1/2 cup shredded low-fat mozzarella
salt & pepper

DIRECTIONS
[1] Mix cream cheese, spinach, and 1/2 cup of the mozzarella well. Stir in pasta and pour into a large baking dish.

[2] Top with remaining mozzarella.

[3] Bake at 350, covered, for 30 minutes. Remove cover and bake for another 15 minutes.


[4] Enjoy! Kent sure did. :)


P.S.... My big boy looks HUGE in that high chair! He is growing too fast!
